Patata

Like a fritatta, Patata is an egg based dish that starts in the stove and ends in the oven.  For this breakfast recipe, I used a nonstick pan that has a metal handle so I could finish cooking this in the oven.

To start, slice 2 medium potatoes and cook in sautee pan over medium heat with 3 tbsp of vegetable oil.  Cook the potatoes and toss so they brown on all sides.  To make sure the potatoes don't stick, add potatoes after the the pan fully heats up.  Add spices to taste. 

Remove pan from heat and add 2 tbsp of butter to pan.  In a bowl, scramble 5 eggs with 1/2 c of milk and pour into pan with browned potatoes, evenly spread on bottom of pan.

Place pan in preheated oven (400) and cook for 15-20 minutes or until center is brown.  Let cool slightly and serve.

You can use any potatoes you like, but I used red potatoes.  You can also toss in herbs or onion and garlic to taste.  Just keep that pan hot before the potatoes are tossed in or else it is a sticky mess!
